Ingredients

- 2 slices of bread
- 1 cup mushrooms, sliced
- 2 eggs
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Toast the bread slices until golden brown.
- In a skillet, heat the olive oil over medium heat.
- Add the sliced mushrooms to the skillet and sauté until softened, about 5 minutes.
- Push the sautéed mushrooms to one side of the skillet and crack the eggs in. Cook them to your preference.
- Season your mushrooms and eggs with salt and pepper to taste.
- Serve the eggs and mushrooms on the toasted bread and garnish with fresh parsley.
Notes
This dish is best enjoyed immediately while the toast is crispy and the eggs are warm and creamy. Store leftovers separately for up to 2 days.
