Description

A warm and hearty soup featuring bite-sized potstickers in a flavorful broth with fresh vegetables.


Ingredients

  • 1 pound potstickers (frozen or homemade)
  • 6 cups chicken or vegetable broth
  • 2 cups bok choy, chopped
  • 1 cup carrots, sliced
  • 1 cup shiitake mushrooms, sliced
  • 3 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the chicken or vegetable broth to a boil. Add the potstickers and cook according to package instructions, about 5-7 minutes.
  2. Once the potstickers are cooked, add the chopped bok choy, sliced carrots, and shiitake mushrooms to the pot.
  3. Let the mixture simmer for about 5-7 minutes until the vegetables are tender.
  4. Add soy sauce and sesame oil to the pot, and stir. Season with salt and pepper to taste, then serve hot, garnished with chopped green onions.

Notes

Feel free to customize with different vegetables or spices. Potstickers can be frozen for later use.
