Tasty and nutritious mini falafel served in pitas or lettuce leaves, perfect for parties or quick meals.


Ingredients

  • 1 cup cooked chickpeas
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp flour
  • 1 tbsp olive oil
  • Mini pitas or lettuce leaves
  • Cherry tomatoes
  • Cucumber
  • Tahini sauce or yogurt dressing

Instructions

  1. In a food processor, combine the cooked chickpeas, fresh parsley, fresh cilantro, garlic, cumin, coriander, salt, pepper, and flour. Pulse until coarsely blended.
  2. Shape mixture into small balls or patties about the size of a golf ball.
  3. Heat olive oil in a skillet over medium heat and cook falafel patties until golden brown on both sides, about 3-4 minutes per side.
  4. Fill mini pitas or lettuce cups with falafel, halved cherry tomatoes, and diced cucumber. Drizzle with tahini sauce or yogurt dressing before serving.

Notes

For added flavor, consider incorporating spices like paprika or chili powder. They can also be baked in the oven for a healthier option.
