Ingredients

  • 1/4 cup chia seeds
  • 1 ripe mango, diced
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large bowl, pour in the coconut milk.
  2. Add chia seeds, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until well combined.
  3. Let the mixture sit for about 10 minutes. Stir again to prevent clumping.
  4. Cover the bowl and refrigerate for at least 2 hours or overnight to thicken. Serve layered with diced mango.
