Instructions
- In a microwave-safe mug, mix the softened cream cheese and sugar-free sweetener until smooth and creamy.
- Add the vanilla extract, followed by the egg, almond flour, and a pinch of salt. Stir until well combined and smooth.
- Place the mug in the microwave and cook on high for about 60-90 seconds, keeping an eye on it. It’s ready when the cheesecake appears set in the middle.
- Carefully remove the mug and let it cool slightly. The cheesecake will firm up a bit as it cools. It’s now ready to enjoy!
Notes
For added flavor, consider adding a dollop of whipped cream, crushed nuts, or berries. Best enjoyed fresh but can be stored in the refrigerator for up to 2 days.
