A warm, hearty stew combining tender meat with robust vegetables, topped with fluffy cheese dumplings.


Ingredients

  • 1 lb lamb or beef, cubed
  • 4 cups beef broth
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 2 tablespoons butter, melted

Instructions

  1. In a large pot, brown the meat over medium heat.
  2. Add onions and garlic, cooking until softened.
  3. Stir in carrots, potatoes, tomato paste, thyme, salt, and pepper.
  4. Pour in beef broth and bring to a boil.
  5. Reduce heat and simmer until the meat is tender, about 60 to 90 minutes.
  6. In a bowl, prepare the dumplings by mixing flour and baking powder, then fold in cheese, milk, and melted butter.
  7. Drop spoonfuls of the dumpling mixture onto the stew.
  8. Cover and simmer for an additional 15-20 minutes.
  9. Serve hot. Ladle the stew into bowls.

Notes

For a richer flavor, consider using bone broth. Resting the stew overnight allows the flavors to develop.
