- 1 lb lamb or beef, cubed
- 4 cups beef broth
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- Salt and pepper to taste
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 2 tablespoons butter, melted
Instructions
- In a large pot, brown the meat over medium heat.
- Add onions and garlic, cooking until softened.
- Stir in carrots, potatoes, tomato paste, thyme, salt, and pepper.
- Pour in beef broth and bring to a boil.
- Reduce heat and simmer until the meat is tender, about 60 to 90 minutes.
- In a bowl, prepare the dumplings by mixing flour and baking powder, then fold in cheese, milk, and melted butter.
- Drop spoonfuls of the dumpling mixture onto the stew.
- Cover and simmer for an additional 15-20 minutes.
- Serve hot. Ladle the stew into bowls.
Notes
For a richer flavor, consider using bone broth. Resting the stew overnight allows the flavors to develop.
