- 1 can chickpeas, drained and rinsed
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1 teaspoon turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Begin by preparing your vegetables: chop the onion, carrots, and bell pepper, and mince the garlic.
- In a large crockpot, combine all the prepared ingredients: chickpeas, diced tomatoes, chopped onion, carrots, garlic, bell pepper, vegetable broth, olive oil, cumin, coriander, paprika, turmeric, salt, and pepper. Stir well to ensure everything is evenly mixed.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- Once the cooking time is up, taste the stew and adjust the seasoning if necessary. Serve warm, garnished with fresh cilantro.
Notes
For extra heat, add cayenne pepper or chopped jalapeño. Mix in other vegetables for added nutrition. The stew can be made thicker by omitting some broth.
