Ingredients

  • 8 ounces cream cheese (softened)
  • 2 large chicken breasts
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 3/4 cup chicken broth
  • Italian seasoning to taste
  • Garlic powder to taste
  • Salt to taste
  • Pepper to taste

Instructions

  1. Start by softening the cream cheese in the microwave for about 30 seconds and set it aside.
  2. Cut the chicken breasts in half horizontally and season with garlic powder, salt, and pepper.
  3. In a large skillet, heat the butter and olive oil over medium-high heat. Add the chicken pieces and cook for 5-6 minutes on each side.
  4. Once cooked, remove the chicken and add the chopped onion to the skillet, sautéing until soft.
  5. Stir in the minced garlic and cook for a minute until fragrant.
  6. Mix in the chicken broth and softened cream cheese until smooth, adding red pepper flakes if desired.
  7. Return the chicken to the skillet, warming through in the sauce for a few minutes.

Serve with rice, pasta, or steamed vegetables. Store leftovers for up to 3 days or freeze for up to 2 months.
