- 4 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced vegetables (spinach, bell peppers, or tomatoes)
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
- In a mixing bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined.
- Stir in the shredded cheese and diced vegetables.
- Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes until set and lightly golden.
- Allow to cool slightly before removing from the tin. Serve warm.
