Description

These Easy Cottage Cheese Egg Bites are perfect for busy mornings or nutritious snacks, packed with protein and colorful veggies.


Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (spinach, bell peppers, or tomatoes)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. In a mixing bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined.
  3. Stir in the shredded cheese and diced vegetables.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes until set and lightly golden.
  5. Allow to cool slightly before removing from the tin. Serve warm.
