Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, vegetable oil, and egg.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill muffin cups about two-thirds full.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  7. Allow muffins to cool slightly before transferring them to a wire rack.

Notes

For extra flavor, add corn kernels or cheese. Can replace egg with a flaxseed mixture for a vegan option.
