Description

Delightful breakfast or snack option that combines wholesome oats with sweet figs and hints of cinnamon.


Ingredients

  • 1 cup rolled oats
  • 2 cups milk (or almond milk)
  • 1 cup figs, chopped
  • 1/2 teaspoon cinnamon
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with oil or cooking spray.
  2. In a bowl, combine the rolled oats, chopped figs, cinnamon, salt, and vanilla extract. Stir until well coated.
  3. In another bowl, mix the milk and honey (or maple syrup) until combined.
  4. Pour the wet mixture into the dry ingredients and mix well.
  5. Distribute the mixture into the greased muffin tin, filling each cup to three-quarters full.
  6. Bake for 25-30 minutes or until set and slightly golden. Test with a toothpick for doneness.
  7. Allow to cool slightly in the pan before transferring to a wire rack.

Notes

Serve warm or at room temperature, and store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
