- 6 large eggs
- 1 cup cooked ground beef
- 2 cups fresh spinach, chopped
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup milk
- 1/2 onion, diced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent and slightly golden.
- Stir in the cooked ground beef and chopped spinach. Cook until spinach wilts.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until frothy.
- Pour the egg mixture over the beef and spinach in the skillet.
- Sprinkle shredded cheese over the top.
- Allow the frittata to cook on the stove for a few minutes until edges begin to set.
- Transfer the skillet to the oven. Bake for 20-25 minutes or until set and golden.
- Allow to cool slightly before slicing. Serve warm.
Notes
Can be stored in the refrigerator for up to 3-4 days or frozen for up to 2 months. Reheat as needed.
