Instructions

- In another bowl, whisk the egg with buttermilk, melted butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in the blueberries gently.
- Heat a skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form, 2-3 minutes.
- Flip the pancakes and cook until golden brown, another 2-3 minutes.
- Serve warm with syrup or toppings of your choice.
