Ingredients

  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 3/4 cup fresh or frozen blueberries

Instructions

  1. In a large bowl, whisk together flour, baking powder, sugar, and salt until well combined.
  2. In another bowl, whisk the egg with buttermilk, melted butter, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Fold in the blueberries gently.
  5. Heat a skillet over medium heat and lightly grease it.
  6. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form, 2-3 minutes.
  7. Flip the pancakes and cook until golden brown, another 2-3 minutes.
  8. Serve warm with syrup or toppings of your choice.
