Description

Rich chocolate cookies with refreshing peppermint, perfect for the holidays.


Ingredients

  • 113g unsalted butter (½ cup)
  • 100g granulated sugar (½ cup)
  • 55g brown sugar (¼ cup, packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 120g all-purpose flour (1 cup)
  • 30g unsweetened cocoa powder (⅓ cup)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 135g chocolate chips (¾ cup)
  • 30g crushed peppermint candies (about ¼ cup)

Instructions

  1. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the chocolate chips.
  6. Scoop dough onto a parchment-lined baking sheet, slightly flattening each scoop. Bake at 350°F (175°C) for 9–11 minutes.
  7. Gently press crushed peppermint candies on top of each cookie after baking.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to one week or freeze for up to 3 months.
