Ingredients

  • 1 cup ditalini pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup olives, sliced
  • 1/3 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the ditalini pasta according to package instructions. Once cooked, drain and let cool completely.
  2. In a large bowl, combine the cooled pasta with cherry tomatoes, cucumber, red onion, bell pepper, olives, and feta cheese. Stir well to mix all ingredients together.
  3. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. Garnish with fresh basil before serving.

Notes

For best results, add the dressing just before serving to prevent sogginess. Cook pasta al dente for optimal texture.
