Ingredients

  • 3 cups leftover stuffing
  • 2 eggs
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped fresh herbs (such as parsley or sage)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine the leftover stuffing, eggs, and broth. Mix until well incorporated.
  3. Fold in the cheese and chopped herbs, and season with salt and pepper. Spoon the mixture into the muffin tin, filling each cup three-quarters full.
  4. Bake for 20-25 minutes, or until golden brown. Allow to cool slightly before removing from the tin and serving warm.
