Description

A simple yet sumptuous Mediterranean Pasta featuring vibrant cherry tomatoes, earthy olives, and creamy feta cheese, perfect for weeknight dinners or gatherings.


Ingredients

  • 8 oz pasta (e.g., penne or fusilli)
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach or arugula
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Cook the halved cherry tomatoes until they start to soften, roughly 3-4 minutes.
  5. Stir in the spinach (or arugula) and cook until wilted, about 2 minutes.
  6. Add cooked pasta, olives, feta cheese, dried oregano, salt, and pepper.
  7. Toss everything together until well combined, letting the flavors meld for 1-2 minutes.
  8. Serve garnished with fresh basil for an extra pop of color and flavor.

Notes
