- 2 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1 cup spinach or arugula
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Cook the halved cherry tomatoes until they start to soften, roughly 3-4 minutes.
- Stir in the spinach (or arugula) and cook until wilted, about 2 minutes.
- Add cooked pasta, olives, feta cheese, dried oregano, salt, and pepper.
- Toss everything together until well combined, letting the flavors meld for 1-2 minutes.
- Serve garnished with fresh basil for an extra pop of color and flavor.
