- 1 pound dumplings (store-bought or homemade)
- 1 tablespoon oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 2 carrots, sliced
- 1 bell pepper, diced
- 4 cups vegetable or chicken broth
- 1 can coconut milk
- 2 tablespoons curry powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant, about 3-4 minutes.
- Add the sliced carrots and diced bell pepper to the pot. Sauté for another 5 minutes, until the veggies start to soften.
- Stir in the curry powder and cook for 1 more minute. Pour in the broth and coconut milk, bringing it to a simmer.
- Add the dumplings to the pot and cook according to package instructions or until they are cooked through, about 5-7 minutes. Season with salt and pepper to taste.
