Ingredients

  • 1 pound dumplings (store-bought or homemade)
  • 1 tablespoon oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 carrots, sliced
  • 1 bell pepper, diced
  • 4 cups vegetable or chicken broth
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant, about 3-4 minutes.
  2. Add the sliced carrots and diced bell pepper to the pot. Sauté for another 5 minutes, until the veggies start to soften.
  3. Stir in the curry powder and cook for 1 more minute. Pour in the broth and coconut milk, bringing it to a simmer.
  4. Add the dumplings to the pot and cook according to package instructions or until they are cooked through, about 5-7 minutes. Season with salt and pepper to taste.
