- 4 oz dark chocolate
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 4 large eggs
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 cup dark chocolate ganache
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- Melt the dark chocolate and butter in a double boiler or microwave until smooth.
- In a bowl, whisk together sugar and eggs until light and fluffy.
- Fold the melted chocolate mixture into the egg mixture until evenly mixed.
- Sift together the flour, cocoa powder, and baking powder, then fold into the batter gently.
- Divide the batter between prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Let cakes cool for about 10 minutes in pans, then transfer to a wire rack to cool completely.
- For the mousse, whip heavy cream and powdered sugar until stiff peaks form, then fold in the melted dark chocolate.
- Once cakes are cool, layer them with a generous amount of mousse between each layer.
- Frost with dark chocolate ganache on top and sides of the cake.
- Chill in the refrigerator until set, about 60 minutes, then slice and serve.
Notes
For best results, use high-quality dark chocolate and ensure eggs are at room temperature. Store leftovers in the refrigerator, covered tightly.
