A comforting and hearty dish made with tender shredded chicken, creamy white beans, sweet corn, and spices, all cooked in a crockpot.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chiles
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Juice of 1 lime
- 1 cup shredded cheese (optional)
- Chopped cilantro for garnish (optional)
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the diced onion, minced garlic, drained white beans, corn, diced green chiles, chicken broth, cumin, oregano, salt, and pepper. Stir to combine.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the pot and stir in lime juice and cheese if using.
Notes
Serve with fresh cilantro, cornbread, tortilla chips, or a green salad. Can be customized for spice level and dietary preferences.
