Description

A comforting and hearty dish made with tender shredded chicken, creamy white beans, sweet corn, and spices, all cooked in a crockpot.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chiles
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Juice of 1 lime
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the diced onion, minced garlic, drained white beans, corn, diced green chiles, chicken broth, cumin, oregano, salt, and pepper. Stir to combine.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, shred the chicken in the pot and stir in lime juice and cheese if using.

Notes

Serve with fresh cilantro, cornbread, tortilla chips, or a green salad. Can be customized for spice level and dietary preferences.
