Warm and hearty, this Classic Crockpot Tuscan Chicken Orzo is a delicious all-in-one meal filled with flavors of Italian herbs, tender chicken, and rich cream cheese.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup baby spinach
  • 1/2 cup cream cheese
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Place the chicken breasts at the bottom of the crockpot, ensuring even cooking.
  2. Add the diced tomatoes, chicken broth, minced garlic, Italian seasoning, salt, and pepper to the crockpot. Stir gently to combine.
  3. Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is tender.
  4. About 30 minutes before serving, add the orzo and baby spinach to the crockpot. Stir in the cream cheese until well combined, and cook until the orzo is al dente.

Notes

For extra flavor, marinate the chicken in olive oil and Italian seasoning before cooking. Add other vegetables for nutrition and adjust the cream cheese for desired consistency.
