A delicious and hearty chili made with sweet potatoes, beans, and bold spices, perfect for any time of year.
Ingredients

- 2 large sweet potatoes, peeled and diced
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: avocado, cilantro, sour cream
Instructions
- Place all ingredients in the crockpot.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, taste and adjust seasonings as needed, adding optional toppings if desired.
Notes
For a spicier chili, add diced jalapeños or cayenne pepper. Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months.
