Description
Creamy and cheesy scalloped potatoes cooked to perfection in a crockpot.
Ingredients

- 6 large potatoes, thinly sliced
- 1 onion, thinly sliced
- 2 cups shredded cheese (cheddar or your choice)
- 1 can cream of mushroom soup
- 1 cup milk
- Salt and pepper to taste
- 1 teaspoon garlic powder (optional)
- 1 teaspoon paprika (optional)
Instructions
- Grease the inside of the crockpot thoroughly to prevent sticking.
- Layer half of the sliced potatoes at the bottom of the crockpot.
- Add half of the sliced onions on top of the potatoes, and sprinkle with salt, pepper, garlic powder, and half of the shredded cheese.
- In a separate bowl, mix together the cream of mushroom soup and milk until smooth, then pour half of this mixture over the layered potatoes and cheese.
- Repeat the layering process with the remaining potatoes and onions, followed by seasoning and cheese. Pour the remaining soup mixture over the top.
- Cover the crockpot and cook on low for 6-8 hours, or until the potatoes are tender.
- Serve warm and enjoy!
Notes
For a lighter version, substitute sour cream or Greek yogurt for the cream of mushroom soup. You can also add crumbled bacon for a smoky flavor.
