Crockpot Scalloped Potatoes

Description

Creamy and cheesy scalloped potatoes cooked to perfection in a crockpot.


Ingredients

Scale
  • 6 large potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 can cream of mushroom soup
  • 1 cup milk
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon paprika (optional)

Instructions

  1. Grease the inside of the crockpot thoroughly to prevent sticking.
  2. Layer half of the sliced potatoes at the bottom of the crockpot.
  3. Add half of the sliced onions on top of the potatoes, and sprinkle with salt, pepper, garlic powder, and half of the shredded cheese.
  4. In a separate bowl, mix together the cream of mushroom soup and milk until smooth, then pour half of this mixture over the layered potatoes and cheese.
  5. Repeat the layering process with the remaining potatoes and onions, followed by seasoning and cheese. Pour the remaining soup mixture over the top.
  6. Cover the crockpot and cook on low for 6-8 hours, or until the potatoes are tender.
  7. Serve warm and enjoy!

Notes

For a lighter version, substitute sour cream or Greek yogurt for the cream of mushroom soup. You can also add crumbled bacon for a smoky flavor.
