Description

A simple and flavorful dish combining tender chicken breasts, zesty salsa, and wholesome beans and corn, perfect for a busy weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Pour the salsa over the chicken, ensuring they’re well coated.
  3. Sprinkle the taco seasoning over the salsa-covered chicken, then add black beans and corn, stirring gently to combine.
  4. Set the crockpot to cook on low for 6-7 hours or high for 3-4 hours.
  5. About 30 minutes before serving, shred the chicken in the crockpot and stir in the shredded cheese until melted.

Notes

Great for tacos, rice bowls, or salads. Store leftovers in an airtight container for up to 3-4 days.
