- 4 boneless, skinless chicken breasts
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup bell peppers, diced
- 1 cup onion, diced
Instructions
- Start by placing the chicken breasts at the bottom of your crockpot.
- In a separate bowl, combine the black beans, corn, diced tomatoes with green chilies, taco seasoning, salsa, diced bell peppers, and onion. Stir well.
- Pour the mixture over the chicken breasts in the crockpot, spreading it evenly. Cover and set to cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked through, shred the chicken in the crockpot and stir everything together.
Notes
For extra flavor, marinate the chicken in salsa and taco seasoning for an hour before cooking. Add chopped jalapeños for extra spice.
