Ingredients

  • 1 lb chicken breasts
  • 1 cup rice (white or brown)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley

Instructions

  1. Place the chicken, rice, chicken broth, onions, carrots, celery, garlic, thyme, and parsley in the crockpot.
  2. Season the mixture with salt and pepper to taste.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in the heavy cream and shred the chicken before serving.
