- 1 cup rice (white or brown)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
Instructions
- Place the chicken, rice, chicken broth, onions, carrots, celery, garlic, thyme, and parsley in the crockpot.
- Season the mixture with salt and pepper to taste.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream and shred the chicken before serving.
