- 4 chicken breasts
- 8 ounces of mushrooms, sliced
- 1 can of cream of chicken soup
- 1 cup of chicken broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of thyme
- Salt and pepper to taste
- 1 cup of heavy cream
- Parsley for garnish
Instructions
- Place the chicken breasts in the crockpot, laying them flat at the bottom.
- Add the sliced mushrooms, chopped onion, and minced garlic to the crockpot. Pour in the cream of chicken soup and chicken broth. Sprinkle in the thyme, salt, and pepper. Stir gently to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
- In the last 30 minutes of cooking, stir in the heavy cream. Serve garnished with chopped parsley.
Notes
For a thicker sauce, mix a tablespoon of cornstarch with water and stir it in during the last hour. Variations can include different mushrooms and herbs.
