Ingredients

  • 1 can (15 oz) diced tomatoes
  • 1 cup olives, sliced (green or black)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the chicken breasts until golden brown on both sides, about 3-4 minutes per side. Transfer the seared chicken to the crockpot.
  2. Add the chopped onion and minced garlic to the same skillet. Sauté until softened and fragrant, about 2-3 minutes.
  3. Mix in the diced tomatoes, sliced olives, dried oregano, dried basil, salt, and pepper. Stir to combine and pour over the chicken in the crockpot.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
