- 1 can (15 oz) diced tomatoes
- 1 cup olives, sliced (green or black)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano

- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Sear the chicken breasts until golden brown on both sides, about 3-4 minutes per side. Transfer the seared chicken to the crockpot.
- Add the chopped onion and minced garlic to the same skillet. Sauté until softened and fragrant, about 2-3 minutes.
- Mix in the diced tomatoes, sliced olives, dried oregano, dried basil, salt, and pepper. Stir to combine and pour over the chicken in the crockpot.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Serve the chicken with rice or pasta and ladle the tomato olive sauce on top for a warm, hearty meal!
