Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 bell pepper (any color), sliced
  • 1 onion, sliced
  • 1 can (14.5 oz) diced tomatoes with green chiles
  • 2 tablespoons fajita seasoning
  • Salt and pepper to taste
  • Tortillas, for serving
  • Optional toppings: sour cream, cheese, cilantro, salsa

Instructions

  1. Begin by placing the chicken breasts, sliced bell pepper, and onion in the crockpot.
  2. Pour the diced tomatoes with green chiles over the top of the ingredients.
  3. Sprinkle the fajita seasoning, along with salt and pepper, over everything and stir gently. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once cooked, shred the chicken in the crockpot and stir to combine with the vegetables and sauce.
  5. Serve warm in tortillas with your favorite toppings.
