- 1 pound boneless, skinless chicken breasts
- 1 bell pepper (any color), sliced
- 1 onion, sliced
- 1 can (14.5 oz) diced tomatoes with green chiles
- 2 tablespoons fajita seasoning
- Salt and pepper to taste
- Tortillas, for serving
- Optional toppings: sour cream, cheese, cilantro, salsa
Instructions
- Begin by placing the chicken breasts, sliced bell pepper, and onion in the crockpot.
- Pour the diced tomatoes with green chiles over the top of the ingredients.
- Sprinkle the fajita seasoning, along with salt and pepper, over everything and stir gently. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken in the crockpot and stir to combine with the vegetables and sauce.
- Serve warm in tortillas with your favorite toppings.
