Instructions
- Heat olive oil in a skillet over medium heat. Brown the chicken thighs on both sides, then transfer them to the crockpot.
- Add the sliced bell pepper, onion, and minced garlic to the crockpot.
- Pour in the diced tomatoes and chicken broth. Sprinkle with oregano, basil, salt, and pepper.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender. Serve over pasta or rice and garnish with fresh parsley.
