- 4 lbs beef short ribs
- Salt and pepper, to taste
- 2 cups baby carrots
- 2 cups sliced mushrooms
- 2 cups beef broth
- 2 tbsp apple vinegar (optional)
- 2 tbsp tomato paste
- 2 tbsp unsalted butter
- 1 bay leaf
- 4 sprigs thyme
- 3 cloves minced garlic
Instructions
- Start by seasoning the beef short ribs generously with salt and pepper.
- In a large skillet over medium heat, carefully sear each rib on all sides until browned, roughly 20 seconds per side.
- Transfer the seared short ribs to your crockpot. Add the baby carrots, sliced mushrooms, beef broth, and optional apple vinegar.
- Mix in the tomato paste, unsalted butter, bay leaf, thyme sprigs, minced garlic, and season with additional salt and pepper to taste. Stir gently to combine all the ingredients.
- Cover and let the mixture cook on low heat for about 8 hours.
- When the time is up, carefully remove the short ribs and vegetables from the crockpot, discarding the herbs.
