Instructions
- Add the chicken breasts, chicken broth, diced tomatoes, onion, garlic, and Italian seasoning to a Crock Pot.
- Season the mixture with salt and pepper to taste.
- Cover the Crock Pot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through.
- Remove the chicken from the pot, shred it into bite-sized pieces, and return it to the pot.
- Stir in the heavy cream and Parmesan cheese until they melt and combine seamlessly.
- If desired, add the cooked pasta and mix well.
- Serve the soup hot, garnished with fresh parsley.
