- 1 pound boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 1 can (10.5 oz) cream of chicken soup
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup heavy cream
- 8 ounces penne pasta
- 1 cup shredded Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Place the chicken breasts in the bottom of the crock pot and sprinkle generously with Cajun seasoning.
- In a bowl, mix together the cream of chicken soup, diced tomatoes, and chicken broth until well combined. Pour this mixture over the seasoned chicken.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the heavy cream and uncooked penne pasta to the crock pot. Stir to combine, cover, and cook until the pasta is al dente. Stir in the Parmesan cheese, season with salt and pepper, and garnish with chopped parsley before serving.
Notes
For a lighter version, consider using half-and-half instead of heavy cream. You can also use frozen chicken breasts but increase the cooking time by about 1 hour.
