  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 8 oz penne pasta

Instructions

  1. Season the chicken breasts with olive oil and Cajun seasoning. Make sure the chicken is evenly coated to maximize flavor.
  2. Brown the seasoned chicken in a skillet over medium heat for 2-3 minutes on each side until lightly golden.
  3. Place the browned chicken in the slow cooker, and add the sliced bell pepper, onion, and minced garlic on top.
  4. Pour in the diced tomatoes with their juice and chicken broth, ensuring all ingredients are well combined.
  5. Cover and cook on low for 4-5 hours or on high for 2-3 hours.
  6. Shred the chicken within the slow cooker using two forks. Stir in the heavy cream and grated Parmesan cheese.
  7. Cook the penne pasta according to package instructions. Drain and then add the pasta to the slow cooker, mixing thoroughly.
  8. Mix everything well, allowing it to heat through for an additional 5-10 minutes before serving.
