- 1 cup chicken broth
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- 8 oz penne pasta
Instructions
- Season the chicken breasts with olive oil and Cajun seasoning. Make sure the chicken is evenly coated to maximize flavor.
- Brown the seasoned chicken in a skillet over medium heat for 2-3 minutes on each side until lightly golden.
- Place the browned chicken in the slow cooker, and add the sliced bell pepper, onion, and minced garlic on top.
- Pour in the diced tomatoes with their juice and chicken broth, ensuring all ingredients are well combined.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours.
- Shred the chicken within the slow cooker using two forks. Stir in the heavy cream and grated Parmesan cheese.
- Cook the penne pasta according to package instructions. Drain and then add the pasta to the slow cooker, mixing thoroughly.
- Mix everything well, allowing it to heat through for an additional 5-10 minutes before serving.

Garnish with extra Parmesan cheese or fresh parsley. Store leftovers in the refrigerator for up to 3 days or freeze in a freezer-safe container for up to 2 months.
