Ingredients

- 2 medium zucchinis
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (panko preferred)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 large egg
- Olive oil or cooking spray
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the zucchinis into thin rounds, about 1/4 inch thick.
- In a bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper.
- In another bowl, beat the egg. Dip each zucchini slice into the egg mixture, then into the breadcrumb mixture.
- Arrange the coated slices on a baking sheet lined with parchment paper.
- Lightly spray or drizzle the surface of the zucchini chips with olive oil.
- Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through.
- Allow to cool slightly before serving.
Notes
Serve warm with marinara or ranch dressing for a delightful accompaniment.
