Description

Delightful crispy chips made from zucchini and Parmesan cheese, baked to perfection for a healthy snack or appetizer.


Ingredients

  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (panko preferred)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 large egg
  • Olive oil or cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis into thin rounds, about 1/4 inch thick.
  3. In a bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat the egg. Dip each zucchini slice into the egg mixture, then into the breadcrumb mixture.
  5. Arrange the coated slices on a baking sheet lined with parchment paper.
  6. Lightly spray or drizzle the surface of the zucchini chips with olive oil.
  7. Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through.
  8. Allow to cool slightly before serving.

Notes

Serve warm with marinara or ranch dressing for a delightful accompaniment.
