- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
Instructions
- Season the chicken thighs generously with salt and pepper.
- Heat olive oil in a large pot over medium-high heat. Add the chicken thighs skin-side down and cook until crispy and golden brown, about 5-7 minutes.
- Flip the thighs carefully and add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
- Add the vegetables, chicken broth, dried thyme, and smoked paprika to the pot. Bring to a simmer, cover, and reduce heat. Cook for 25-30 minutes until the chicken is cooked through and the vegetables are tender.
Notes
