  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups vegetables (e.g., carrots, bell peppers, zucchini)
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika

Instructions

  1. Season the chicken thighs generously with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat. Add the chicken thighs skin-side down and cook until crispy and golden brown, about 5-7 minutes.
  3. Flip the thighs carefully and add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
  4. Add the vegetables, chicken broth, dried thyme, and smoked paprika to the pot. Bring to a simmer, cover, and reduce heat. Cook for 25-30 minutes until the chicken is cooked through and the vegetables are tender.
