Ingredients

- 1 cup wild rice
- 4 cups vegetable broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, cooking until softened, about 5-7 minutes.
- Stir in garlic and cook for another minute.
- Add the wild rice and vegetable broth; bring to a boil. Reduce heat and let it simmer for 45 minutes, or until the rice is tender.
- Stir in heavy cream, and season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
Notes
For a vegan option, substitute heavy cream with coconut cream. Ensure to wash wild rice thoroughly before cooking.
