A comforting and hearty soup that combines the earthiness of wild rice with fresh vegetables in a creamy base.


Ingredients

  • 1 cup wild rice
  • 4 cups vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, cooking until softened, about 5-7 minutes.
  2. Stir in garlic and cook for another minute.
  3. Add the wild rice and vegetable broth; bring to a boil. Reduce heat and let it simmer for 45 minutes, or until the rice is tender.
  4. Stir in heavy cream, and season with salt and pepper to taste. Serve hot, garnished with fresh parsley.

Notes

For a vegan option, substitute heavy cream with coconut cream. Ensure to wash wild rice thoroughly before cooking.
