- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
- Pasta or veggies for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp and cook until pink, approximately 3-4 minutes, stirring occasionally.
- Stir in halved cherry tomatoes and spinach. Cook until the spinach wilts and tomatoes soften, about 3 minutes.
- Pour in heavy cream and add grated Parmesan. Stir until combined and creamy. Season with salt and pepper.
- Serve creamy Tuscan shrimp over pasta or veggies, garnished with fresh basil.
Notes
Use fresh or high-quality frozen shrimp for best results. Be careful not to overcook the shrimp.
