Description

A delightful Italian dish featuring succulent shrimp in a creamy garlic sauce with cherry tomatoes and spinach.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Pasta or veggies for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add the shrimp and cook until pink, approximately 3-4 minutes, stirring occasionally.
  3. Stir in halved cherry tomatoes and spinach. Cook until the spinach wilts and tomatoes soften, about 3 minutes.
  4. Pour in heavy cream and add grated Parmesan. Stir until combined and creamy. Season with salt and pepper.
  5. Serve creamy Tuscan shrimp over pasta or veggies, garnished with fresh basil.

Notes

Use fresh or high-quality frozen shrimp for best results. Be careful not to overcook the shrimp.
