Ingredients

  • 2 cups dried split green peas, rinsed
  • 1 large onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 medium potato, peeled and diced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 6 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 cup diced smoked ham or 1 ham bone
  • 1/2 teaspoon black pepper
  • Salt, to taste

Instructions

  1. Heat olive oil in a large soup pot over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften and the onions turn translucent.
  2. Stir in the minced garlic and cook for 1 minute until fragrant, being careful not to let it burn.
  3. Add the rinsed split peas, diced potato, bay leaf, dried thyme, and vegetable broth to the pot. If you’re using smoked ham or a ham bone, add it now. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour, stirring occasionally to prevent sticking, until the peas are completely soft and the soup has thickened considerably.
  4. Remove and discard the bay leaf. If a ham bone was used, take it out of the pot. For a creamier consistency, use an immersion blender to partially puree the soup while leaving some texture. Alternatively, transfer half the soup to a blender, puree until smooth, and return it to the pot. Season with salt and pepper to taste. Serve hot, ideally alongside a chunk of crusty bread.

Notes

Leftover soup can be stored in an airtight container in the refrigerator for up to 3-4 days. To freeze, let the soup cool completely, then transfer it to freezer-safe containers or bags, where it can stay fresh for up to 3 months.
