Description

A delightful twist on a classic dish, combining soft gnocchi with the seasonal flavors of pumpkin and sage.


Ingredients

  • 1 pound potato gnocchi
  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon sage, dried or fresh
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Cook the gnocchi according to the package instructions, then drain and set aside.
  2. In a large skillet, heat a drizzle of olive oil over medium heat, add minced garlic, and sauté until fragrant.
  3. Add pumpkin puree, heavy cream, sage, salt, and pepper to the skillet, stirring until combined and heated through.
  4. Gradually stir in grated parmesan cheese until it melts, then gently add the cooked gnocchi and toss to coat.

Notes

For a deeper flavor, toast the sage in the oil before adding the garlic. Leftovers can be stored in an airtight container for up to 3 days.
