- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons butter
- Chopped chives or green onions for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the diced potatoes and broth to the pot. Stir everything together and bring it to a boil. Once it boils, reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are soft, use an immersion blender to puree the soup until smooth, or transfer the soup in batches to a standalone blender.
- Stir in the heavy cream and season with salt and pepper to taste. Heat the soup through on low heat without boiling, then serve hot and garnish with chopped chives or green onions.
Notes
