Ingredients

- 8 ounces rotini pasta
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, chopped
- 1/2 cup bell pepper, diced
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the rotini pasta according to package instructions. Once done, drain and rinse with cold water to cool.
- Combine mayonnaise, Dijon mustard, garlic powder, salt, and pepper in a large bowl.
- Add the cooked pasta, cherry tomatoes, cucumber, red onion, and bell pepper to the bowl. Mix until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with chopped parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
