Description

A delightful dish combining tender pasta with a rich, creamy dressing and crisp vegetables, perfect for picnics or as a side dish.


Ingredients

  • 8 ounces rotini pasta
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup bell pepper, diced
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the rotini pasta according to package instructions. Once done, drain and rinse with cold water to cool.
  2. Combine mayonnaise, Dijon mustard, garlic powder, salt, and pepper in a large bowl.
  3. Add the cooked pasta, cherry tomatoes, cucumber, red onion, and bell pepper to the bowl. Mix until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
