- 1 lb fresh mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic. Sauté until the onions are translucent and fragrant, about 3-4 minutes.
- Add the sliced mushrooms to the pot. Cook them until they release their juices and become tender, stirring occasionally, about 5-7 minutes.
- Pour in the vegetable or chicken broth and bring everything to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes to enhance the flavors.
- Use an immersion blender to puree the soup until it’s smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a standard blender in batches.
- Stir in the heavy cream, and season with salt and pepper to taste. Let the soup simmer for an additional 5 minutes to blend all the flavors.
- Serve hot, garnished with fresh parsley for a pop of color and freshness.
Notes
For variations, try using different mushrooms, adding fresh herbs, or substituting the cream with a lighter alternative.
