Ingredients

  • 1 lb fresh mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic. Sauté until the onions are translucent and fragrant, about 3-4 minutes.
  2. Add the sliced mushrooms to the pot. Cook them until they release their juices and become tender, stirring occasionally, about 5-7 minutes.
  3. Pour in the vegetable or chicken broth and bring everything to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes to enhance the flavors.
  4. Use an immersion blender to puree the soup until it’s smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a standard blender in batches.
  5. Stir in the heavy cream, and season with salt and pepper to taste. Let the soup simmer for an additional 5 minutes to blend all the flavors.
  6. Serve hot, garnished with fresh parsley for a pop of color and freshness.

Notes

For variations, try using different mushrooms, adding fresh herbs, or substituting the cream with a lighter alternative.
