Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine the ground chicken, breadcrumbs, egg, grated Parmesan cheese, chopped parsley, and a pinch of salt and pepper. Mix thoroughly until everything is well combined. Use your hands to form the mixture into meatballs, about 1 to 1.5 inches in diameter. Set these aside on a plate.
  2. Heat the olive oil in a large skillet over medium heat. Once the oil is hot, carefully add the meatballs in batches. Cook them for about 5-7 minutes, turning occasionally, until they are browned on all sides. Once browned, remove them from the skillet and set aside.
  3. In the same skillet, add the sliced mushrooms and minced garlic. Sauté these for about 3-5 minutes, or until the mushrooms are tender and golden brown, filling your kitchen with their savory aroma.
  4. Pour in the heavy cream, chicken broth, and add the Italian seasoning. Stir everything together and bring it to a gentle simmer. Once simmering, return the meatballs to the skillet. Cover and let them simmer for an additional 15-20 minutes, or until the meatballs are cooked through and the sauce has thickened slightly.

Notes

For added flavor, consider mixing in grated garlic or onion powder into the meatball mixture. Use fresh herbs like thyme or rosemary for a lovely aromatic touch. If you prefer a lighter sauce, substitute half of the heavy cream with whole milk.
