- 2 cups shredded cooked chicken
- 1 cup sun-dried tomatoes, chopped
- 1 small yellow onion, diced
- 4 garlic cloves, minced
- 5 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 cups medium shell pasta
- 2 cups baby spinach
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 teaspoon red pepper flakes
- Salt and black pepper, to taste
Instructions
- In a large pot, heat olive oil and butter over medium heat until melted.
- Add the diced onion and sauté until soft, about 3-4 minutes. Then stir in the minced garlic and cook until fragrant, about 1 minute.
- Mix in the chopped sun-dried tomatoes and cook for 2 minutes. Pour in the chicken broth and bring to a boil.
- Once boiling, add the medium shell pasta and cook until al dente, about 8-10 minutes.
- Lower the heat, then add the shredded cooked chicken and heavy cream. Let simmer for 5-10 minutes to thicken slightly.
- Stir in the grated parmesan cheese and baby spinach. Cook until the cheese is melted and the spinach is wilted. Season with red pepper flakes, salt, and pepper to taste. Serve hot and enjoy!
