Description

A delightful dish combining tender chicken, a luscious cream sauce, and flavorful pasta, perfect for date nights or family gatherings.


Ingredients

  • 4 chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Red pepper flakes, to taste
  • 8 ounces penne pasta
  • Fresh parsley, chopped, for garnish
  • Additional Parmesan cheese, for garnish

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil and butter in a skillet over medium heat, sear chicken until golden brown, about 5–6 minutes per side, then remove and let rest.
  3. Add minced garlic and chopped sun-dried tomatoes to the skillet, sauté for 1–2 minutes.
  4. Add chicken broth to deglaze the pan, then stir in heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Simmer for 4–5 minutes.
  5. Cook penne pasta in salted boiling water until al dente, then drain.
  6. Toss cooked pasta into the sauce until fully coated.
  7. Serve pasta with sliced chicken on top, garnished with parsley and additional Parmesan.

Notes

For added flavor, marinate chicken in Italian dressing before cooking. To make it healthier, substitute half-and-half or milk for cream, or use whole grain pasta.
