- 4 chicken breasts
- Salt and pepper, to taste
- 1 tablespoon Italian seasoning
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Red pepper flakes, to taste
- 8 ounces penne pasta
- Fresh parsley, chopped, for garnish
- Additional Parmesan cheese, for garnish
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil and butter in a skillet over medium heat, sear chicken until golden brown, about 5–6 minutes per side, then remove and let rest.
- Add minced garlic and chopped sun-dried tomatoes to the skillet, sauté for 1–2 minutes.
- Add chicken broth to deglaze the pan, then stir in heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Simmer for 4–5 minutes.
- Cook penne pasta in salted boiling water until al dente, then drain.
- Toss cooked pasta into the sauce until fully coated.
- Serve pasta with sliced chicken on top, garnished with parsley and additional Parmesan.
Notes
For added flavor, marinate chicken in Italian dressing before cooking. To make it healthier, substitute half-and-half or milk for cream, or use whole grain pasta.
