Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 lb ground turkey
  • 1 cup heavy cream
  • 1 cup spinach (fresh or frozen)
  • 1 cup cherry tomatoes (halved)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Parmesan cheese (for serving)

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat and add minced garlic; sauté for about 1 minute until fragrant.
  3. Add ground turkey to the skillet and cook until browned, about 5-7 minutes.
  4. Stir in cherry tomatoes and spinach; cook until the spinach wilts.
  5. Pour in heavy cream and stir to combine; let simmer for 3-4 minutes.
  6. Combine the cooked pasta with the turkey mixture and toss to coat.
  7. Season with salt and pepper to taste.
  8. Serve warm, topped with grated Parmesan cheese.
