A delightful twist on traditional pasta salads, combining the crunch of dill pickles with the creamy richness of mayonnaise.
Ingredients

- 8 oz pasta (like rotini or penne)
- 1 cup dill pickles, chopped
- 1/2 cup red onion, finely chopped
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon dill weed
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions, until al dente. Once finished, drain the pasta and let it cool for a few minutes.
- In a large bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, dill weed, salt, and pepper until well combined.
- Add the cooled pasta, chopped dill pickles, and finely chopped red onion to the dressing. Toss everything together gently until all the ingredients are evenly coated.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes.
Notes
For a lighter salad, substitute half of the mayonnaise with Greek yogurt. Feel free to add additional veggies or proteins to customize your salad.
