Description

A delightful twist on traditional pasta salads, combining the crunch of dill pickles with the creamy richness of mayonnaise.


Ingredients

  • 8 oz pasta (like rotini or penne)
  • 1 cup dill pickles, chopped
  • 1/2 cup red onion, finely chopped
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dill weed
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions, until al dente. Once finished, drain the pasta and let it cool for a few minutes.
  2. In a large bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, dill weed, salt, and pepper until well combined.
  3. Add the cooled pasta, chopped dill pickles, and finely chopped red onion to the dressing. Toss everything together gently until all the ingredients are evenly coated.
  4. Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes.

Notes

For a lighter salad, substitute half of the mayonnaise with Greek yogurt. Feel free to add additional veggies or proteins to customize your salad.
