- 2 cups broccoli florets
- 1 cup carrots, diced
- 1/2 cup onion, chopped
- 3 cups vegetable broth
- 1 cup heavy cream
- 2 cups cheddar cheese, shredded
- 2 tablespoons butter
- Salt and pepper to taste
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Instructions
- In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onions and diced carrots, cooking until softened, about 5 minutes.
- Stir in 2 cups of broccoli florets along with 3 cups of vegetable broth. Bring to a simmer and cook until the broccoli is tender, about 10 minutes.
- Using an immersion blender, blend the soup until it reaches your desired consistency.
- Stir in 1 cup of heavy cream, 2 cups of shredded cheddar cheese, and 1/4 teaspoon each of garlic powder and onion powder. Season with salt and pepper to taste. Let it cook until the cheese melts, about 5 minutes. Serve hot.
Notes
For added flavor, consider topping with extra shredded cheddar cheese or fresh herbs. Store leftover soup in an airtight container for up to 3 days.
