A delightful take on a classic favorite, this Creamy Copycat Jason’s Deli Broccoli Cheddar Soup is rich, comforting, and easy to make at home.


Ingredients

  • 2 cups broccoli florets
  • 1 cup carrots, diced
  • 1/2 cup onion, chopped
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups cheddar cheese, shredded
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onions and diced carrots, cooking until softened, about 5 minutes.
  2. Stir in 2 cups of broccoli florets along with 3 cups of vegetable broth. Bring to a simmer and cook until the broccoli is tender, about 10 minutes.
  3. Using an immersion blender, blend the soup until it reaches your desired consistency.
  4. Stir in 1 cup of heavy cream, 2 cups of shredded cheddar cheese, and 1/4 teaspoon each of garlic powder and onion powder. Season with salt and pepper to taste. Let it cook until the cheese melts, about 5 minutes. Serve hot.

Notes

For added flavor, consider topping with extra shredded cheddar cheese or fresh herbs. Store leftover soup in an airtight container for up to 3 days.
