- 1.3 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized strips
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp all-purpose flour
- 9 oz cremini or white mushrooms, sliced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 1 cup chicken stock
- 1 tbsp Dijon mustard
- 1 tsp paprika
- 1/2 cup sour cream (full-fat recommended)
- 2 tbsp fresh parsley, chopped (plus extra for garnish)
Instructions
- Season chicken strips with salt and black pepper, then coat with all-purpose flour.
- In a skillet, heat olive oil and butter, and sauté chicken until golden brown. Remove chicken from skillet.
- In the same skillet, add remaining olive oil and butter, and cook onions and mushrooms until softened. Stir in garlic.
- Sprinkle paprika and pour in chicken stock, then return chicken to skillet and simmer until fully cooked.
- Remove from heat, stir in sour cream and parsley. Adjust seasoning to taste.
- Serve over egg noodles, rice, or mashed potatoes, garnished with parsley.
Notes
For added flavor, marinate chicken beforehand and use full-fat sour cream for a creamier texture.
