Ingredients

  • 1.3 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized strips
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp all-purpose flour
  • 9 oz cremini or white mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 cup chicken stock
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 1/2 cup sour cream (full-fat recommended)
  • 2 tbsp fresh parsley, chopped (plus extra for garnish)

Instructions

  1. Season chicken strips with salt and black pepper, then coat with all-purpose flour.
  2. In a skillet, heat olive oil and butter, and sauté chicken until golden brown. Remove chicken from skillet.
  3. In the same skillet, add remaining olive oil and butter, and cook onions and mushrooms until softened. Stir in garlic.
  4. Sprinkle paprika and pour in chicken stock, then return chicken to skillet and simmer until fully cooked.
  5. Remove from heat, stir in sour cream and parsley. Adjust seasoning to taste.
  6. Serve over egg noodles, rice, or mashed potatoes, garnished with parsley.

Notes

For added flavor, marinate chicken beforehand and use full-fat sour cream for a creamier texture.
